  • Rinse your broccolini.
  • Slice approximately a half of an inch off of the bottom of the stems. This removes the tough woody part of the stalk.
  • If there are still any thicker stalks in your bunch, I recommend peeling them down or slicing them in half.

Blanch and Sautee

This is one of the easiest ways to cook perfect broccolini every time and it is easy to build on this recipe by adding in other ingredients. I have listed a few options in this post.

  • Boil a medium sized pot of water.
  • Drop broccolini in the boiling water and stir around for approximately 2 minutes.
  • Remove from the boiling water and immediately drop into an ice bath to stop the cooking (your broccolini will be bright green).
  • Heat a skillet and add about four tablespoons of butter.
  • Drain and pat dry the broccolini.
  • Add broccolini to the hot pan and toss for about 2 minutes.
  • Salt and pepper to taste.

You now have a delicious and mouthwatering batch of broccolini to add as side dish.

Lemon and Garlic Broccolini

I learned this variation of blanched and sautéed broccolini from Ina Garten. It’s fresh and bright taste goes perfectly with Italian dishes or a roasted chicken breast.

  • Follow the steps above to blanch and saute your broccolini.
  • Once the butter has melted in your skillet add:
    • The zest of a half of lemon.
    • 2 tablespoons of chopped garlic.
    • Salt and pepper to taste.
  • Add your broccolini as explained above and sauté for two minutes.
  • As it finishes add the juice of half a lemon.

Grilled Broccolini

  • Add dried red pepper flakes, chopped garlic, salt and pepper to about two tablespoons of olive oil.
  • Toss your broccolini in the olive oil mixture.
  • Place the broccolini on a hot grill, turning occasionally, until tender (7 to 8 minutes).
  • Remove from heat and top with the juice of half a lemon and some shaved or shredded parmesan.

YUMMY!! This is a favorite of my kiddos and goes great with a beautiful steak or some simple chicken strips.

Broccolini with Cherry Tomatoes and Pine Nuts

I came up with this variation for how to cook broccolini towards the end of the summer when I had more cherry tomatoes than I knew what to do with. I was adding them to everything! Once you have mastered the “blanch and sauté” method above these simple additions will really dress up any party table!

  • Halve 1 cup of cherry tomatoes.
  • Toast a half of a cup of pine nuts in the melted butter before adding the broccolini.
  • Toss in the broccolini and cherry tomatoes at the same time and sauté for about two minutes.
  • Salt and pepper to taste.

This dish was such a huge success at my last picnic that I had to email out the instructions to my friends the next day!
